Join us February 9-11, 2026 at the Sheraton Tampa Brandon, located at 10221 Princess Palm Ave. Tampa, FL, for the 2026 NICA Business Expo and Fare Foods Food Show, where we will be "Making Connections!"
Designed for Commercial Exhibitors, Concessionaires, Fairs, and Industry Partners, the NICA Business Expo will provide Educational Sessions, Workshops, Panels, and Roundtable Discussions that cover important topics and solutions to the challenges our Industry is faced with every day. Throughout the week, connect with seasoned Industry Professionals during candid conversations about inflation, fees, pricing, labor challenges, and profitability, and gain insight from collaborative panels featuring Concessionaires, Fair Management, and Suppliers. Plus, Pam Simon, CFE, Minnesota State Fair Sales Director, will lead a conversation with Ray Allison, CFE, Indiana State Fair Executive Director; Eddie Cora, CFE, Miami Dade County Fair President and CEO; and Cheryl Flood, CFE, Florida State Fair CEO, regarding their vision, experience, and common sense. Additional sessions will explore being found by both Fairs and Fairgoers, food trends, adapting to changing guest tastes and nutritional expectations, and more. Attendees will also take part in our ever-growing "Chat & Chew" Roundtable Luncheon, featuring rotating, peer-driven conversations on trending topics such as Guest Experience, Staffing, Payment Methods, Line Management, Theft Prevention, and Pricing Strategies.
The Fare Foods Food Show will once again feature both new and returning exhibitors showcasing emerging food trends, innovative products, and technology to help kickstart the 2026 Fair Season. From the Official Ribbon Cutting to the Fare Foods Hospitality Suite on Monday and Tuesday Night, the Food Show is your opportunity to network, discover what’s next, and make meaningful supplier connections. Don’t miss the 1st Annual NICA Cornhole Tournament, a new event benefiting scholarships, during each Food Show.
We also invite all members to attend the Annual General Membership Meeting, on Wednesday, February 10th, at 5:00 PM in the Sheraton's Cypress Room, where NICA will present a Year in Review, install the 2026 Board of Directors, award CCE Recipients, host the Coca-Cola Membership Contest, and hear updates from Benefit Partners and Sister Organizations. The event concludes with our "Making Connections" Annual Dinner and Gala Celebration, held in the Sheraton's Ballroom, honoring our 2025 Hall of Fame Recipient Jennifer Giordano, CCE, highlighting the work of the NICA Foundation, paying tribute to Staff Members Linda Frisco and Jessica Gottsche, and enjoying a delicious buffet from Fare Foods.

JKJ Workforce has provided legal solutions for over 40 years regarding temporary or permanent foreign workers. This session will answer questions on the current labor situation including H-2B Workers, P-Visas, and the progress on the CARE/RIDE Act.

This session explores how content creation, marketing collaboration and shared storytelling between Concessionaires and Fairs can build visibility, deepen audience connection and drive measurable engagement. Drawing on real-world examples from The Big E and the OC Fair, the discussion will highlight how concessionaires can elevate themselves beyond menu items to become recognizable voices and influencers within the fair experience. Topics include the dos and don’ts of content development, how to identify stories worth telling, social media as a two-way engagement tool and amplifying Fair marketing in an authentic way.
